Linzer Cookies

I stopped baking since I moved to Paris. My little electric oven is not really tempting and I keep telling myself that once I'll move to a bigger apartment with a real oven I will catch up on my favourite recipes.

The only exception I make is Christmas and Birthday's. As a child, I loved baking with my mum and the smell of gingerbread cookies in the kitchen is something that will always mean Christmas to me. I know that by now, she has at least three or four different kinds of cookies neatly prepared and stored in boxes ready for my sister and her family. I will not be going home to Slovakia this Christmas so I've decided to bake some of my favourite ones for a few friends coming over this weekend.

Linzer cookies (we make them every Christmas) employ the same recipe as the Linzer torte, one of the oldest known tarts discovered in Austria in 1653.

Linzer Cookies Recipe


RECIPE
100g powdered sugar
300g flour
200g butter
1 egg
25g vanilla sugar
zest of lemon
raspberry jam

Mix together all the ingredients (except the jam), wrap the dough with a plastic and leave it to rest for one hour in the fridge. Meanwhile, preheat the oven to 180 degrees. 

Roll out the dough on a floured surface to 4mm thickness. Start cutting out your cookies with a cookie cutter. With a small cutter, I used a heart, cut out the centres of half the cookies (these will be the tops). Place the cookies on a baking tray and cook for 7 minutes or until lightly golden, keep a close eye on them! Once cool, spread the jam on each solid cookie and top with the halves with the cut-out center. Sprinkle with powdered sugar and serve. Easy, right? :)
